Ingredients (for 2-4 people)
- 1 onion
- 1 carrot
- 2 stick celery
- 1 tin tomatoes
- 2 cloves garlic
- 1/2 tsp oregano / Herbs de Provence
- 1 tin beans (e.g. haricot beans)
- Pasta
Method
Chop and fry the onion, carrot and celery in a small amount of oil. Add tin of tomatoes, herbs and garlic and cook until all soft.
Take off the heat and blend up. Pour back into the pan and add beans. Serve with pasta for a quick mid-week meal.

Aiming for 5 a day is important for all of us, children and grownups! The more vegetables we can sneak into our diet the better. Vegetables and beans are a good source fibre which helps feed our beneficial gut bacteria.
